In frame - Veggie toast. . Simple to make and healthy to eat, they are loaded with vegetables and toasted in air frier 😄 I’m experimenting with my air frier these days and will share more such healthier recipes soon. . For making them, I tossed vegetables in a pan using little oil. Added black pepper and salt. Meanwhile kept my bread slices to toast in the air frier. I had applied some cream cheese on the toast for the little one and then spread the cooked vegetables over it. . Remember not to overcook the vegetables to maintain the crunch. Also you can add chilli sauce or any other spices to flavour your toast. . Ta-da your breakfast is ready to gulp. Thanks me later 😄 . In frame - Air fried Beetroot croquettes. . The ever healthiest croquettes I had 😀 They are rich with goodness of beetroot and are air fried. Isn’t it a win win deal? . Recipe doesn’t involve any hard and fast rule, take some mashed boiled potatoes and boiled and grated beetroot. Now open your refrigerator and add whatever leftovers you have. I had addded some paneer sabzi from last night. For binding you can use bread crumbz or some leftover bread slices as well. I also added lots of finely chopped onion for the crunch. . Mix everything together and add spices of your choice. I used crushed black pepper, coriander powder and dry mango powder followed by some salt to taste. . Now pre heat the air frier for 10 minutes and spray some oil in the tray just to avoid sticking of prepared raw croquettes. Air fry them for 10 minutes and then give a toss in between. Now fry them for 10 more minutes and ta-da your guilt free snack is ready. . In frame - Pizza bites 🥰 . They are super quick to make, you just have to get your dough ready. Recipe for Pizza dough is already there in my Pizza post, you can check that for reference. Roll the dough in mini discs, you can use your fingers as well to spread the dough. Now spread pizza sauce, loads of cheese, toppings of your choice and finally sprinkle some oregano and chilli flakes. Bake it in a pre-heated oven for 20 minutes at 180 degrees centigrade or until cooked completely. Your Pizza bites are ready to binge 😋 . Because Saturdays are for batter preparation and Sundays are for Idlis and Dosas😬 . In frame are pillowy soft Idlis with Tomato and Coconut chutney. I can have my Idlis and Dosas with chutney only and I’m lucky enough that he also likes them in same way😃 These Idlis are super healthy with zero oil. The only oil which I used here is for tempering the chutneys. . Recipe: 1) Idli rice : 3 cups 2) White Urad dal : 1 cup 3) Fenugreek seeds : 1/2 tsp Soak everything separately over night and grind them separately into fine paste. You can add little water wherever required to maintain the consistency. Now mix everything together and keep it to ferment for good10-12 hours. . For making Idlis, add salt as per taste to the batter and make sure to keep the batter consistency on the thicker side. You can check my story highlight for the exact consistency. . Pour the batter into Idli stand and cook them for 10-12 minutes in a steamer. Serve hot with chutney or sambhar ☺️ . Mumbai street style fried rice 🥢 . Rainy season is all about munching your favourite snacks whether it’s some road side Pav Bhaji or that spicy bhutta. This rainy season as we could not go outside and I was badly craving for some Pav Bhaji. Interestingly, I didn’t have any Pavs with me in my pantry and also I was in no mood to bake some😛 Then came these Mumbai stret style fried rice. ☺️ . They were so quick to make, just fry vegetables of your choice( I took tomatoes, baby corns, sweet corns and some france beans). Remember not to overcook them. Then add lemon juice and the hero of the recipe - ‘Pav bhaji’ masala. Give everything a good toss and mix together with boiled rice. Add salt and green chillis. Let them fry for 5-10 minutes by tossing in between to get that crisp. Turn off the flame and garnish with lots of fresh coriander. . Ta-da, now have double fun in Baarish 😬 . In frame - Sunshine popsicles 😍 . Talking about #myfoodiebff who is none other then @devika_pandit , our love for food is always eternal. Though after getting married we are living in different cities but we have many fond memories associated at almost all the food joints of Pune. Pasta salad 🥗 . This Pasta salad is super quick to make and super yummy to have. All you need to do: . 🥗 Boil 1.5 cup of Pasta of your choice, I had used whole wheat Fusilli Pasta. . 🥗 Now take veggies of your choice, I took boiled corns, blanched carrots, capsicum and tomatoes. Toss them into the Pasta. . 🥗 Add salt and pepper as per taste. . 🥗 For the dressing I took 3tbsp greek yogurt + 3tbsp mayonnaise + 1tbsp Honey + 1tbsp lime juice. You can increase or reduce the quantity as per taste. To make it more healthier you can skip mayonnaise. . 🥗 Saute everything well and ta-da your Pasta salad is ready. . My dinner thali today - Paneer masala, plain curd, kaddu ki sabzi, mango, chapati and chawal ki kheer. . Since my MIL is fasting this complete month, I had made this paneer masala without onion and garlic. This was quick to make and tastes superb. . For making Paneer masala you need: 1) Paneer - 200gms 2) Ginger - 1 inch(grated) 3) Tomatoes - 3 medium sized 4) Green cardamom - 2 nos 5) Black cardamom - 1 no 6) Clove - 2 nos 7) Black peppercorn - 4 nos 8) Cumin seeds - 1/2 tsp 9) Red chilli powder - 1 tsp 10) Turmeric powder - 1/2 tsp 11) Coriander powder - 1/2 tsp 12) Salt - As per taste 13) Fresh cream - 4tbsp 14) Oil - 2tbsp 16) Chopped fresh coriander 17) Bay leaf - 1 no . Take 1tbsp oil in a pan and add cumin seeds, cloves, bay leaf, pepper corns, black cardamom and green cardamom to it. Saute for 2 mins and then add roughly chopped tomatoes to it. . Once the tomatoes are cooked partially allow them to cool and grind them in a grinder into a fine paste. . Now take 1tbsp oil and add turmeric and red chilli powder to it followed by 2tbsp water. This will give your curry a nice color. . Further add all the remaining spices and tomato puree to it. Cook it for 5 minutes at medium flame. . Finally add paneer pieces to it and cook for another 2 minutes. Now turn off the flame and add fresh cream to it. Garnish it with fresh coriander and serve hot. . Sprouts for Saturday breakfast 😋 For the sprouts I have used Black chana, Green Moong Dal and Black Masoor Dal. Usually I also add Red lobia to my sprouts it but I was short of them at the time of soaking. . AlsoI have used chopped onions, tomatoes, cucumbers and the hero of the sprouts today was chopped mangoes. Trust me the tanginess of lime juice and sweetness of mangoes give them a twist. . Made this Achaari paneer last night and trust me it was finger licking tasty. The recipe requires little bit more ingredients but believe me the end result will do justice to it and you will thank me later for the recipe 😃 . Recipe: For the masala: 1) Mustard seeds: 1tsp 2) Fennel seeds or saunf: 1tsp 3) Cumin seeds: 1tsp 4) Kalonji or Nigella seeds: 1/2 tsp 5) Methi dana: 1/4 tsp 🌸Dry roast all of them for 2-3 minutes till they turn aromatic. Remember don't burn them or brown them. Cool them down and grind them in grinder to get your achaar masala. . For the gravy: 1) Onion: 1(Grind it to a fine paste) 2) Tomato: 1(Grind it to a fine paste) 3) Curd: 1 cup(Whisk it and mix it with 1tbsp Besan) 4) Asafoetida: 1/4 tsp 5) Red chilli powder: 1/2 tsp 6) Turmeric powder: 1/4 tsp 7) Coriander powder: 1/2 tsp 8) Cumin powder: 1/4tsp 9) Mango pickle masala: 1tsp 10) Ginger-garlic paste: 1tbsp 11) Salt: To taste 12) Paneer: 200gm 13) Fresh cream: 3tbsp 14) Cashews: 15nos, crushed to fine powder in grinder 🌸Heat oil in a pan and add ginger garlic paste, followed by onion paste. Let it cook then add tomato paste to it. Cook it till oil starts separating from the tomatoes. Now add whisked curd to it followed by remaining spices and achaari masala prepared above. Lastly add crushed cashews to the gravy. . 🌸Finally add Mango pickle masala and diced paneer to the gravy. Allow it to cook for 2 minutes at low-medium flame. Once cooked turn off the flame and add fresh cream and crushed methi leaves.
